
Thai Drunken Noodles are a classic street food dish from Bangkok that Are so quick and easy to make at home. Add extra chilli sauce if you like.
Method
- Put the rice noodles into a bowl. Cover with warm water and leave for 10 minute. give them a really good mix to get out any excess starch. Then pour over just boiled water. Leave for 4-5 minutes until al dente. Drain and refresh well to stop them sticking and then drain again. Drizzle with oil and mix well.
- Heat the oil in a wok over a high heat. Add the onion and pepper and stir-fry for 2-3 minutes until a little golden. Add the prawns and continue to stir fry for 2-3 minutes until cooked through. Chuck in the chilli and garlic and stir-fry for 30 seconds until fragrant, then add the greens and stir fry for 1-2 minutes until wilted.
- Tip the noodles into the pan and add the soy sauce, oyster sauce, fish sauce and lime juice. Toss together. Divide between four bowls and tuck in.

2 tbsp vegetable oil, plus extra for drizzling
1 onion, thinly spiced
1 red pepper, thinly spiced
300g raw peeled king prawns
1 red chilli, finely chopped
3 cloves garlic finely chopped
100g spinach/kale/greens
1 tbsp soy sauce
1 tbsp oyster sauce
1 tsp fish sauce
The juice of ½ lime
