- Preheat the oven to 200 fan. Take two sheets of tin foil and lightly scrunch them to make two long boat shapes. Place this onto a baking tray. This handy trick will stop the baguette rolling around.
- Cut the baguette in half lengthways and brush the exposed bready sides with olive oil. Pop them onto the foil and then place the baking tray into the oven for 10-12 minutes for the bread to go a little golden.
- Preheat the grill to high. Take the bread out of the oven and slather over the pesto. Layer up the mozzarella and grill for 3-4 minutes until the cheese is bubbling. Arrange the ham and rocket over the top, slice and serve.
