Cheesy Zaatar Pretzels

Hold press. This is your new favourite snack. Crispy, chewy pretzels stuffed with oozy mozzarella and sun-dried tomatoes, and covered in fragrant zaatar. I use shop bought pizza dough, which you just roll out and stuff. It’s super easy. My Cheesy Zaatar Pretzels are great as is, but I love to dunk mine into something spicy, like muhammara paste or verdant zhoug.

Method

  1. Preheat the oven to 180 fan. Place the dough onto a floured surface and roll out into two 40cm long by 15cm wide rectangle. By no means does this need to be perfect.
  2. Cut the both pieces of dough into two strips lengthways. Place a line of mozzarella, lengthways, down the middle of each strip and then nestle the sun-dried tomatoes in between the cheese. Roll up into a long cigar shape and fold it around into a pretzel. Repeat with the rest.
  3. Place the pretzels onto lined baking sheets and brush the tops with olive oil. Sprinkle over the zaatar and plenty of salt and bake for 20-25 minutes or until golden. Serve immediately.

Makes 4 Pretzels

440g shop bought pizza dough
200g mozzarella, ripped
100g sun-dried tomatoes, roughly chopped
2 tbsp olive oil
2 tbsp zaatar
Sea salt
