Creamy courgette meze

This sizzling summer meze is the most fabulous accompaniment to a BBQ. It goes so well with grilled fish and barbequed chicken. This is all about the flavour of the courgettes and yogurt, so get the best in season vegetables and the thickest yogurt you can find.

Method

  1. Place the courgettes into the centre of a clean tea towel. Gather up the sides and twist them in tightly around the courgettes. Continue to twist so that you squeeze all of the moisture out of the courgettes.
  2. Tip the courgettes into a mixing bowl and add the yogurt, 1 tsp. Turkish pepper flakes, lemon, dill and a good pinch of salt. Mix everything together really well. Check the seasoning and add more salt to taste.
  3. Transfer the meze to a fabulous serving dish and drizzle over the olive oil. Scatter over the walnuts and add the remaining Turkish pepper flakes. Serve immediately.

Serves 4-6

3 large courgettes, grated
500g Greek yogurt
1 ½ tsp Turkish pepper flakes
The juice of a lemon
A large handful of finely chopped dill
1 tbsp extra virgin olive oil
15g walnuts, bashed into a rubble
Sea salt
