- Heat the oi in a non-stick frying pan over a medium heat. Chuck in the onion and pepper and cook, stirring occasionally, for 5-6 minutes until soft.
- Put the tomatoes, Turkish pepper flakes and a small pinch of salt into the pan. Mix well and cook, stirring occasionally, for 2-3 minutes or until the tomatoes have broken down.
- Pour the egg whites into the pan and mix well. Cook, stirring occasionally, for 1-2 minutes or until set. Add the coriander. Mix well and divide between two serving plates. Using a fine grater, grate a little halloumi over each plate and serve immediately.
