frying pan pizza recipe

Cooked in a searing hot frying pan, these easy to make pizzas have a lovely crisp bottom and oozy, melted top. Using a pan gives much more heat than an oven, and then a few minutes under the grill cooks everything evenly. I love a spicy pepperoni pizza or ‘diavola’ but you can add anything – I have included five of my favourite toppings under the recipe as alternatives. Have fun with it and try anything you have in the fridge.

Method

  1. To make the dough, sift the flour into bowl and add the yeast, oil, water and a good pinch of salt. Bring together in the bowl and then tip out onto a floured surface. Knead for 8-10 minutes or until pale, smooth and soft. Place into an oiled mixing bowl and cover with a clean tea towel. Leave to prove for 30 minutes.
  2. Pre-heat the grill to high. Divide the dough into 4 and roll out into rounds that will fit into your frying pan. I do mine about 10 inches.
  3. Heat a non-stick frying pan over a high heat and add a tablespoon of the oil. Place one of the pizzas into the pan and spoon over some of the tomato. Swirl it over the top, leaving a gap around the edge. Top with mozzarella and salami and a pinch of chilli, oregano and salt. Leave for 1-2 minutes until then bottom looks golden and crispy. Reduce the heat if its cooking too fast.
  4. Place the pizza under the grill to finish cooking on top. This should take about 2-3 minutes, until the cheese is melted. Serve immediately.

Ingredients

Serves 4

To make the dough
500g plain flour
7g packet easy bake yeast
2 tbsp olive oil
300-330ml water
Salt

Toppings
4 tbsp olive oil
1 can chopped tomatoes
2 balls of mozzarella, sliced
12 slices of salami
2 tsp chilli flakes
2 tsp dried oregano

5 of my favourite toppings..

Sausage and Broccoli – peel 4 sausages, rip them up and fry them in a pan until golden. Top each pizza with tomato sauce, cheese (blue is amazing here), sausages and very small pieces of broccoli. Cook as above.

Roasted Veggies and Feta – top the pizza with tomato sauce, roasted veggies and feta. Cook as above.

Ham and Mushroom – top the pizzas with tomato sauce, chopped ham and thinly sliced mushrooms. Scatter over chilli flakes and oregano and cook as above. You could go wild and try an egg as well. Delish!

Garlic Bread – mix room temperature butter with crushed garlic, finely chopped parsley and salt. Place the pizza dough into the hot pan and prick it all over with fork. Cook as directed above, spreading the butter all over the top before it goes under the grill.

Pesto and Goat’s Cheese – spoon a load of pesto over the base, top with ripped goat’s cheese and a pinch of dry herbs. Cook as above.
