Healthy Popcorn Chicken

Method

  1. Pre heat the oven to 180 fan. Mix the corn flour together with the garlic powder, smoked paprika and a good pinch of salt in a shallow bowl. Mix the breadcrumbs together with the zaatar in another shallow bowl and whisk the eggs in a third bowl so you have a production line.
  2. Dip the chicken into the flour and dust off any excess. Dunk the chicken into the egg and then the breadcrumbs so they get completely coated. Place onto a lined baking sheet and pop into the oven and cook for 12-15 minutes until cooked through.
  3. Meanwhile, mix the yogurt with the harissa and serve with the cooked chicken.

2 tbsp corn flour
2 tsp garlic powder
2 tsp smoked paprika
100g panko breadcrumbs
4 tbsp zaatar
2 eggs, whisked
550g chicken breasts, cut into 1 inch cubes
100g yogurt
2 tbsp rose harissa
Salt
