Lamb burger Recipe with blue cheese and red pepper relish

Method

  1. Pre-heat the BBQ to high. Put the lamb into a mixing bowl and add the smoked paprika, cumin and a good pinch of salt. Mix well and divide into four. Shape each into burgers about 4 inches in diameter.
  2. Rub a little oil over the burgers and chuck them onto the BBQ and grill for about 3-4 minutes each side or until cooked through. Place the cheese over the top of each burger and put the lid on for about 30-40 seconds until melted.
  3. Meanwhile, put all the ingredients for the relish into a mini food processor with a pinch of salt and blitz into a course paste.
  4. To serve, spread the mayonnaise onto the bottom of the burger buns and top with the lettuce. Place the burgers over the salad. Spoon over some of the relish and cover with the lids. Serve immediately.

Serves 4

For the burgers
500g 20% fat minced lamb
1 tsp smoked paprika
1 tsp ground cumin
1 tbsp olive oil
4 Castello Blue Cheese Slices
Sea salt

For the relish
1 salad tomato
½ red onion
½ red chilli
50g jarred roasted red peppers
1 tbsp white wine vinegar
Sea salt

To serve
100g mayonnaise
4 brioche burger buns
1 baby gem, picked
