Lebanese Quesadillas

These are a complete rif on manouché, a flatbread that is eaten all over Lebanon for breakfast. I love this recipe so much but often don’t have time to make the dough so this is a very quick and easy way to get my manouché fix. You can add fresh red chillies or even some dry chilli flakes it you like a bit of fiery heat.

Method

  1. Place two of the tortillas on a chopping board. Rip over the mozzarella and red pepper. Scatter over the coriander leaves, zaatar and a pinch of salt . Top with the remaining tortillas.
  2. Brush two non-stock frying pans with a little oil and heat over a medium heat. Transfer the tortillas to the pans and cook for 2-3 minuets each side, brushing with more oil as you turn, until golden and the cheese melted. Remove from the pans, slice and devour.

Ingredients

Makes 2 quesadillas

1 tbsp olive oil
4 tortilla breads
160g mozzarella cheese
160g drained, cooked roasted red peppers
A handful of coriander leaves
3 tsp zaatar
Sea salt
