Peach Summer Salad


  1. Whisk together all the ingredients to make the dressing with a good pinch of salt and pepper.
  2. Chuck the peaches, radicchio, rocket, tomatoes and dressing into a serving dish and toss together. Scatter over the pomegranate seeds and rip over the mozzarella. serve immediately.


For the dressing
2 tbsp olive oil
4 tbsp. date molasses
The juice of a lemon
Sea salt

For the salad
3 really ripe peaches, stoned and cut into wedges
200g radicchio, shredded
A handful of rocket leaves
150g cherry tomatoes, halved
30g pomegranate seeds
150g mozzarella
