Method
- Heat the oil in a non-stick frying pan over a medium heat. Add the halloumi and fry it until golden. I find the first side takes 2-3 minutes and the second about 1-2 minutes.
- Reduce the heat a little add the harissa, ½ the honey, lemon and a pinch of salt. Mix together gently and turn the halloumi in the sauce.
- To serve, transfer the halloumi to a serving plate and spoon over everything from the pan. Drizzle over the remaining honey and scatter over the thyme leaves. Serve immediately.

225g block halloumi, sliced
1 tbsp rose harissa
2 tbsp runny honey
The juice of ½ a lemon
The leaves from a sprig of Thyme
