Drunken Thai Noodles

Thai Drunken Noodles are a classic street food dish from Bangkok that Are so quick and easy to make at home. Add extra chilli sauce if you like.

Method

  1. Put the rice noodles into a bowl. Cover with warm water and leave for 10 minute. give them a really good mix to get out any excess starch. Then pour over just boiled water. Leave for 4-5 minutes until al dente. Drain and refresh well to stop them sticking and then drain again. Drizzle with oil and mix well.
  2. Heat the oil in a wok over a high heat. Add the onion and pepper and stir-fry for 2-3 minutes until a little golden. Add the prawns and continue to stir fry for 2-3 minutes until cooked through. Chuck in the chilli and garlic and stir-fry for 30 seconds until fragrant, then add the greens and stir fry for 1-2 minutes until wilted.
  3. Tip the noodles into the pan and add the soy sauce, oyster sauce, fish sauce and lime juice. Toss together. Divide between four bowls and tuck in.

Serves 4

250g rice noodles
2 tbsp vegetable oil, plus extra for drizzling
1 onion, thinly spiced
1 red pepper, thinly spiced
300g raw peeled king prawns
1 red chilli, finely chopped
3 cloves garlic finely chopped
100g spinach/kale/greens
1 tbsp soy sauce
1 tbsp oyster sauce
1 tsp fish sauce
The juice of ½ lime
