Thai Shredded Chicken Salad

Method

  1. To make the dressing, whisk together the olive oil, fish sauce, lime juice and caster sugar and a pinch of salt.
  2. Put the red onion, orange and any juices, cucumber, tomatoes, herbs, chilli, peanuts and chicken into a bowl. Pour over the dressing. Toss together and serve immediately.

Ingredients

Serves 4

For the dressing
4 tbsp olive oil
2 tbsp fish sauce
The juice of 2 limes
2 tbsp caster sugar
Salt

For the salad
A red onion, finely chopped
2 oranges, peeled and segmented
1 cucumber, deseeded and thinly sliced
200g cherry tomatoes, halved
2 large handfuls of coriander leaves
2 large handfuls of mint leaves
40g toasted peanuts, smashed
1 red chilli, finely chopped
300g cooked chicken, shredded
