- Chuck the onion into a little bowl. Add the juice of a lime and a good pinch of salt. Mix well and leave for 10 minutes so that the onion can pickle a little. Whilst that’s happening, you crack on and chip everything else.
- Put the watermelon into a serving dish and add cucumber, feta, mint, olive oil, remaining lime juice and a little pinch of salt. Toss together and top with the onions. Serve immediately.

850g Watermelon, cut into 2cm cubes
250g cucumber, cut into 1 inch cubes
200g feta cheese, cut into little cubes
A large handful of roughly chopped mint leaves
