- Start by making the smashed lemon thyme sugar. Combine the sugar, thyme and lemon zest in a pestle and mortar and bash together. Tip into a shallow dish.
- Muddle the berries together with the lemon, maple syrup and bourbon.
- Dip the rim of four tumblers into shallow dish of water and then into the sugar. Fill with plenty of ice. Pour over cocktail and top up each glass with 50ml of tonic water. Stir together gently and serve immediately.
