This is a super easy 5 ingredient cheesecake. If you have any hazelnuts lying around, they add a mega crunch, or a grating of dark chocolate is LUSH. However, if I am completely honest, and bearing in mind this is for Easter, smashed Maltesers are the best. THE BEST. That’s what I would do if I was going to pimp my cheesecake.
- To make the base, blitz the biscuits in a food processor until fine. Add the melted butter and pulse together. Tip into a lined 23cm spring from cake tin. Even out over the bottom and then push down to make a base. Set in the fridge for 30 minutes.
- Mix the Nutella and cream cheese together until smooth.
- Whisk the cream into soft peaks and then fold in the Nutella mix. Pour over the cheesecake base and then set for 4 hours or overnight. Scatter over the Maltesers if using and serve immediately.
250g digestive biscuits
80g butter, melted
200ml double cream
340g cream cheese
100g Maltesers, half smashed, optional extra
