- Pre-heat a non-stick frying pan over a medium heat. Cut the buns open and brush with a little oil. Pop them into the pan and cook for 1-2 minutes or until golden.
- Heat the oil in the non-stick pan over a medium-high heat and add the halloumi. Fry for 1-2 minutes a side until golden.
- Spread the babganoush over the buns, tomato, cucumber and halloumi. Pop on the tops and dive on in.

1 tbsp olive oil, plus extra for brushing
1 x 250g block of halloumi, cut into 6 slices
1 tomato, sliced
¼ cucumber, shaved or sliced
