Smoked Salmon and Cream Cheese Toasts


  1. Poach the eggs in a pan of simmering water for 2-3 minutes until set.
  2. Put the toast onto a plate and top with the cream cheese and salmon. Add the avocado and season with a pinch of salt. Add the eggs and season with plenty of pepper. Serve immediately.


Serves 2

2 eggs
2 slice sourdough, toasted
25g cream cheese
100g smoked salmon
1 avocado, thinly sliced
Salt and pepper
