Spicy Cream Cheese and Chorizo Pancakes

Method

  1. To make the pancakes whisk everything into a smooth batter.
  2. Melt some butter in a pan or brush with oil over a medium heat and pour in 3 tbsp of the batter. Spread out evenly over the base of the pan, filling in any gaps with a little more batter. Cook for 2-3 minutes on one side and then about 1 minute on the other or until cooked through and a little golden.
  3. Spread the cream cheese in a line across the pancakes about 1/3 from the bottom. Spread the rose harissa over the top and cover with the chorizo slices. Roll up and serve immediately. You can give the a cheeky blast in the microwave for about 30 seconds to help soften the cheese even more.

For you need to make pancakes, this makes 8-10
100g plain four
300ml whole milk
2 eggs
Butter or oil for cooking
Salt

For the filling, per pancakes you will need
1 left over pancakes
15g soft cream cheese
1 tsp rose harissa
3 slices (20g) of chorizo
