Turkey Hoisin Pancakes

Method

  1. Heat the oil in a non-stick frying pan over a medium heat. Add the turkey and stir fry for 3-4 minutes until heated through and a little golden and crispy. Add the light soy sauce and Chinese 5 spice. Mix well and remove from the heat.
  2. Meanwhile, mix the hoisin sauce together with the dark soy and put into a serving bowl.
  3. Transfer the turkey to a serving dish and serve immediately with the cucumber, spring onions, hoisin sauce and pancakes.

Ingredients

Serves 4

1 tbsp ground nut oil
300g leftover turkey, shredded
2 tsp light soy sauce
1 tsp Chinese 5 spice
110g hoisin sauce
1 tsp dark soy
½ cucumber, deseeded and cut into match sticks
10 spring onions, cut into thin strips
Chinese pancakes to serve
