- Mix the spring onions with the turkey, cheese, mayonnaise, harissa and a pinch of salt.
- Butter the bread and place buttered side down onto a chopping board. Spread the filling out in an even layer on one slice of bread and top with the other.
- Heat a non-stick frying pan over a medium heat and cook the sandwich for 1 ½ – 2 minutes a slice until golden and crispy. Turn off the heat and cover the pan. Leave for a minute so that the cheese goes really oozy. Slice in half and serve immediately.
